How and how long to store a dry saucisson?
Charcuterie SaucissonSaucisson is a food enjoyed by many people. This cured meat wins people over with its irresistible aromas and its mouth-watering taste. It is possible to store a dry saucisson for several weeks or months. Many people, however, do not master the storage conditions for this product. Discover with Directos.eu the tips for keeping it and how long it lasts.
Keep your saucisson in a dry place
Storing dry saucissons requires specific conditions. These foods must be kept in a dry, ventilated place. The idea is to find a spot with a temperature between 12 and 20 °C to keep your products in good conditions. The temperature must not be too warm nor too low. If you are new to this product, our saucisson guide sums up the basics before getting started with storage.
A kitchen is a fairly suitable place to store your saucissons. Hang them or wrap them in a clean cloth and place them somewhere away from humidity. You can place your products near a slightly open window so the breeze reaches them more regularly.
Keep your cured meat in a saucisson box
Your cured meat made from fresh pork or wild boar can be perfectly kept in a saucisson box. All you need to do is make holes in this container to keep your food protected. The openings encourage ventilation, which helps prevent it from going mouldy. Dry saucisson is made from natural products. As a result, it needs to breathe to keep well. You can use cloth designed to improve the food's ventilation.
Keep your dry saucisson in a fridge or a freezer
The fridge is an option to store your dry saucisson when you do not want to eat it straight away. Despite its humid interior and lack of ventilation, this appliance lets you keep your product for a fairly long time. To limit the fridge's impact on taste and aromas, wrap the food in a cotton cloth. Then place it in the vegetable drawer.
To store your saucisson in a freezer, make sure the meat (pork, wild boar, etc.) used to make it is fresh. This helps limit the effects of this storage period on the product. Use film to wrap the meat. Avoid air pockets in the wrapping. To defrost the dry saucisson, take it out 24 hours before eating it.
How long does dry saucisson keep?
A quality saucisson can keep for several months. Follow this advice:
- optimal temperature,
- dry place.
This cured meat product has no use-by date. It is a product that has undergone salting and a natural drying process. The presence of a kind of white, grey or green mould (bloom) on the surface of dry saucissons does not mean either that they are unfit to eat. The appearance of the bloom is a normal stage that shows storage has succeeded. If the food looks weepy, has a rancid smell with liquid dripping from its surface, however, it is best not to eat it.
