Chorizo mussels: the ingredients
For this mussels recipe with chorizo, you will need the following ingredients:
- 2 liters of bouchot mussels,
- 150 grams of spicy chorizo,
- 1 onion, 1 shallot, 1 clove of garlic,
- 2 tablespoons of olive oil,
- 20 cl of white wine (dry),
- 8 sprigs of flat-leaf parsley.
The preparation of this recipe takes approximately thirty minutes, including five cooking times.
Preparing the chorizo mussels
This recipe is ideal for four people. Swirl the mussels in cold water to remove encrusted sand. Remove the skin from the chorizo and cut it into thin slices. Then peel and chop the shallot, garlic and onion. Add olive oil to a casserole dish and pour in the shallot, onion and garlic mince. Pour the chorizo slices into the mixture then turn up the heat slightly to brown them.
In a casserole dish with a lid over a high heat, pour the cleaned mussels. Add wine and cover. Shake the casserole from time to time and cook until all the mussels are open. If necessary, separate the mussels in two and remove the empty shells. This operation allows the mold to soak into the sauce.
Finally, strip the parsley and chop it. Divide your chorizo mussels into fairly deep plates. Sprinkle the dish with chopped parsley and serve hot.
