What is a cheese saucisson?

A cheese-based saucisson is a charcuterie made from finely minced pork, into which pieces or a filling of cheese are folded. The mixture is then cased in natural casing before being air-dried using traditional artisan methods. The result offers a striking contrast between the robust flavour of the cured meat and the milky softness of the cheese.

Making this product calls for particular know-how. Artisan charcutiers carefully select their ingredients: premium meat, matured cheeses and judiciously measured spices. The marriage of flavours builds during drying, a period in which the aromas develop and harmonise to create an incomparable taste.

Temperature and slicing

Take the saucisson out of the fridge some twenty minutes before serving so the aromas can fully express themselves. Use a well-sharpened knife to cut thin slices, around three to four millimetres thick. That fineness lets you taste the meat and the cheese at the same time.

Recommended pairings

Cheese saucisson often stands on its own, but a few accompaniments elevate the tasting. Lightly toasted country bread, crunchy gherkins or a handful of fresh walnuts make classic pairings. For a more original touch, try it with dried fruit such as figs or apricots.

Drink pairings

Sheep's cheese, the crowd-pleaser

This is the one we recommend for a first try. Catalan sheep's cheese, a close relative of Manchego, brings a milky, creamy flavour that rounds out the taste of the cured meat without ever overpowering it. Its pressed paste holds up particularly well to drying, which gives an evenly textured saucisson from one end to the other. In a 130 g fuet format, it shares easily between two or three.

Goat's cheese, the most characterful without being excessive

Goat brings a tangy edge that cuts through the richness of the pork. It is the sharpest contrast of the three, while remaining accessible to anyone unfamiliar with powerful cheeses. It is also our largest format, 180 g, which makes it the right choice for a board meant for several people.

Roquefort, the most powerful

Here, the cheese leads. Roquefort, a blue-veined cheese made from sheep's milk, brings a robust flavour with saline notes reminiscent of walnut. It is not for everyone: if you do not enjoy Roquefort on its own, you will not enjoy it any more in a saucisson. For its devotees, however, it is the most memorable of the three.

French cheeses or Catalan cheeses?

Many cheese saucissons sold in France use camembert, cantal or beaufort. Our range rests mainly on Catalan cheeses, with one notable exception: our Roquefort saucisson really is made with PDO Roquefort from Roquefort-sur-Soulzon, in the Aveyron.

That choice is not only a matter of proximity. Not every cheese withstands drying: a camembert or a brie, soft and very moist, lend themselves poorly to the exercise and make the product fragile. Pressed pastes such as Catalan sheep's cheese, or blue-veined pastes such as Roquefort, keep their structure and their flavour through the weeks of drying. That is what explains the composition of our range.
