Pig Breeds

- Serrano Ham: Made from white pigs, mainly breeds such as Landrace, Large White, or Duroc.

- Iberian Ham: Made from Iberian pigs, a native breed of the Iberian peninsula, known for its ability to infiltrate fat into the muscle.

Feeding

- Serrano Ham: The pigs are generally fed on cereals and fodder.

- Iberian Ham: The quality of the ham depends heavily on diet. Several categories are distinguished according to feeding:

  • Bellota (acorn): Pigs fed mainly on acorns and natural grasses during the "montanera" period.

- Iberian Ham: The process is similar but often longer, ranging from 24 to 48 months, especially for higher-quality hams such as Bellota. Curing is often carried out under controlled conditions for optimal flavour development.

Price

- Serrano Ham: Generally cheaper than Iberian ham, mainly due to lower production costs and the availability of the pigs.

- Iberian Ham: Considered a luxury product. Prices can vary considerably depending on the category (Bellota, Cebo de Campo, Cebo). Bellota hams are among the most expensive due to their superior quality and curing time.

Appearance

- Serrano Ham: Pink to bright red colour with fat distribution more concentrated around the edges.

- Iberian Ham: Darker red colour with visible marbled fat infiltrated into the meat, giving it a distinctive marbled appearance.

- Serrano Ham: Serrano ham can be certified "TSG" (Traditional Speciality Guaranteed), which guarantees a traditional level of quality and production process.

- Iberian Ham: Iberian hams benefit from a rigorous classification system based on breed and diet, often certified by specific labels:

  • Black labels: for 100% Iberian Bellota ham.
  • Red labels: for Iberian Bellota ham crossed 50% with other breeds.
  • Green labels: for Iberian Cebo de Campo ham.
  • White labels: for Iberian Cebo ham.
