- 20 cl of white wine (dry),
- 8 sprigs of flat-leaf parsley.

Preparing the chorizo mussels
This recipe is ideal for four people. Swirl the mussels in cold water to remove encrusted sand. Remove the skin from the chorizo and cut it into thin slices. Then peel and chop the shallot, garlic and onion. Add olive oil to a casserole dish and pour in the shallot, onion and garlic mince.
